Potato flakes are the most important form of dehydrated potato product. The process of preparing dehydrated potato flakes begins with cooking and mashing the potatoes. Mashed potatoes are then pressed onto a drum drier using a roller, forming thin sheets. The dried sheets with desired level of moisture content are subsequently broken and ground to a precise density, resulting in high-quality potato flakes.
